PREPARING YOUR HIMALAYAN SALT COOKING PLATE FOR FIRST TIME USE
To cure your salt plate, place the plate in a cold oven and turn on the heat to 180°F. Cook for 1 hour, turn off heat and let cool. DO NOT open your oven when plate is hot during the curing process. When your oven has cooled remove the plate. Your plate is now fully cured. You may now heat it fully to the recommended cooking temperature of 400°F. You may notice white bumps or bubbles on the plate when heating. This is million year old water boiling out of the plate. Simply wipe it away. DO NOT USE PLATE ON TOP OF STOVE. These dense slabs cook with almost perfect heat distribution. The salt plate will also add a new level of flavor complexity to your food.
COOKING WITH A SALT PLATE
Heat your salt plate to 400°F. for 30 minutes or more. You will notice a natural whitening of its color as it heats. Remove the plate from the oven. Caution! It will be very hot. Set your plate on a heat-resistant surface. Lightly toss your fish, meat or vegetables in oil seasoned with herbs or spices (DO NOT ADD SALT). Place your foods in small batches directly on the salt plate. When you are cooking “wet foods” or thick foods, cut them thin so they cook faster. If the food is too thick the cooking time will be longer and you will end up with over salted food.
CARING & CLEANING
Please do not submerge your salt plate in water or soak it in the sink. The salt plate will absorb the water, causing it to crack next time it is heated. Be sure the salt plate is completely cooled to room temperature before cleaning. Salt plates are naturally antimicrobial. To remove any food debris, clean it with a scrub pad then give it a quick rise and pat dry with a paper towel. Make sure to dry the surface thoroughly after cleaning. Salt plates may pick up colors from foods. This is normal. Your salt plate may develop small cracks or fissures over time which is also normal. If treated with care, your salt plate will provide years of cooking pleasure!

To use as a cold serving tray: Freeze the plate overnight and use to serve frozen items such as ice cream, gelato, or chocolates. Refrigerate the plate overnight for cheese platters, carpaccio, sushi or flavored butters.
