Our Monograno pasta line is uniquely flavorful. For more than 4 years we meticulously tested the hundreds of strains of wheat, farro and kamut until we finally selected the best of each for the most flavorful, nutritious and highest quality pasta. We grind the grain each morning for that day’s pasta.

Each box of pasta can be traced back to a specific organic field. This attention to grain, where it’s grown, and how it is milled results in remarkable pasta.

Pasta developed into one of the most distinctive symbols of Italian culture spanning thousands of years and reaching all the way from the Dolomites to Sicily. It is being enjoyed and appreciated all over the world as it continues to flout culinary and cultural boundaries and constitutes a highly accurate ingredient and its importance is easily on par with that of other ingredients that form a particular dish.

Pasta is a universal message (which should be sent to the Moon…) of which Pastificio Felicetti is a very proud messenger. We make our pasta with the same level of enthusiasm that we feel when presenting it to fellow pasta-lovers.

The entire Monograno Pasta range is an integral part of this message, whether cooked ‘al chiodo’ (literally to the nail), ‘al dente’ or overcooked for babies or great-grandmothers. You may re-hydrate it, cook it like risotto, mistreat it, fry or whip it. Present it to the most exotic friend you have and tell him that it was made to be eaten according to his habits.

For more than a century the history of pasta making and the history of our family have been inseparably intertwined. It took fourth generations and finally our grandfather Valentino’s vision, which saw his small workshop grow into a successful company that is well-known for its quality products the world over, has come true. In order to achieve this, our family dedicated their lives to this work in times of war and crisis, and by facing down big challenges our company emerged successful. The desire to make something of the highest quality while being willing to constantly learn, to trust in a vision, to be open to new challenges without ever losing sight of what is in our heart are the most important tools to create quality, without ever being content with what has already been achieved. The flavor of the Dolomites - a unique location

We are located in Predazzo, in the heart of the extraordinary Valle di Fiemme. It lies at the feet of a magnificent Mountain range in the Dolomites and more than a thousand meters high, where the river Travignolo joins the river Avisio.

To us it is a magical place that can capture and release the energy of snow-capped mountain peaks. Working and living here has always meant being part of a continuous conversation with nature.

We are very proud to be part of a community that has been able to extract precious resources from the difficulties of the mountain life and we enjoy the privilege to experience every day this most beautiful landscape. This presents us with a gift, which to accept it puts us also on a duty to respect and preserve the environment we love.

Thanks to our mountains we are one of the few pasta making companies that can make use of raw ingredients which are becoming increasingly rare: pure spring water and clean air.

Our commitment to organic farming methods is a far reaching, all-encompassing programmer which involves controlled production methods and often demands from us to go the extra mile. It is not only the research on cultivation methods, responsible farming, total exclusion of chemical fertilizers or the reduction of intensive farming, it is the sincere dedication to excellence which also forms the foundation on which our company was built.

Our commitment pushes us to extract the spring water at 2,000 meters high in order to preserve the natural quality of all raw ingredients at every step of the process. It can be summarized in the principle of honestly questioning our impact on the environment demanding a good reason for how we do things every step of the way.

Only by doing so can we comply with the strict protocols on organic farming which we recognize for what they are: an important source of values for the quality of our products and our life.

 

Raw ingredients: where quality begins

Its taste is harmonious and fully round and at the same time fresh and rich.

Its beautiful smell fills you from the moment it enters the boiling water. Our pasta is the result of our will to find true excellence which is what we believed in for four generations.

To the gift of the Dolomites, pure water and clean air, we only add raw materials which have been selected with careful attention. Durum wheat which is both whole wheat and organically farmed, Kamut and spelt are rigorously selected from producers who share our high quality standards.

Working the pure wheat with a hundred years of experience helps to achieve an ideal balance to obtain resistance to cooking and taste perfection, together with the highest organoleptic properties.

And we never forget to add the passion for what we do and the pride we take in creating something unique. In doing so we change an every day taste into something truly special.

5,000.00 square meters, four production lines working continuously to create 60 tons of pasta per day, more than a hundred different shapes - these are obviously very important figures. But the character of our production also reveals the strong preservation of our beliefs in every step of the process.

From the choice of the raw material all the way to the packaged pasta which is being distributed in the whole world, we apply rigorously the control procedures that allow us to achieve the most advanced quality certifications. Our research workshop tests the purity and organoleptic properties of the raw materials. After that, the semolina is sieved from shelves and sent to the production lines. Spring water is then added and the pasta is molded into different shapes before being dried.

Simple and essential principles which demand constant attention to detail until it becomes authenticated excellence. That’s how we achieve the perfect simplicity of our flavors and satisfy our clients.
