These 4 leaves traditional Balsamic Vinegar of Modena D.O.P. are our top of the range. They are aged for a minimum of 12-25 years following the most ancient recipes from Modena, resulting in a dense, syrupy consistency with a gently aromatic flavor.

Gold: Aged minimum 25 years.
Burgundy: Aged minimum 12 years.

Vinegars are rated and classified into four categories of quality, identified by vine leaf symbols. 1 leaf: classic taste, slightly piquant, ideal for salads and for daily use. 2 leaves: sweet taste, ideal for grilled meats and baked vegetables. 3 leaves: straightforward, well-rounded taste, ideal for side courses, fish and hot sauces. 4 leaves: superb taste achieved by maturing the best selections, ideal for fine cuisine, fruits, ice cream and parmesan.

About:

Acetum specialize in manufacturing quality Balsamic Vinegar of Modena Acetum is based in Cavezzo, in the historical building of the Motta Cellars: established in 1906, the cellars were totally restructured to host the vinegar production. The ageing areas, fully rebuilt with barrels and casks of different sizes and types of wood, are at the top of the capacity in the industry: the total volume in ageing is close to two million liter, the volume in stock is over three million, in so placing the company in the highest ranks.

In 1979, the Consortium of Producers of Traditional Balsamic Vinegar of Modena established a series of controls, rules and regulations for production of "true" balsamic vinegar. In April 2000, the European Union granted this product the highest recognition by awarding it a DOP (Protected Designation of Origin), ensuring consistency and continuation of its centuries-long tradition. Within the Consortium there is a board of assaggiatori (expert tasters) who guarantee that each vinegar bearing the exclusive Seal of Quality on its Giuggiaro-designed bottle (the same designer as Ferrari) has been produced in compliance with all the rules, regulations and procedures and offers the authentic characteristics of this magnificent product.
